Cravings A Girl Can't Help

Mexican food!

The wonderful yet cruel Taco Bus has been mocking me from just down the street.
It knows I have been craving Mexican food all week.
Refried beans and enchiladas just sound heavenly right now.
So much I even went out and bought pinto beans to turn um in to REFRIED HEAVEN.
You thought girls would crave chocolate, or peanut butter.
Not me, it's Mexican or Chili Cheese fries delight.


Anyway here are some random cool facts/stories:

I ran into Haley and I's favorite dunker at the bookstore a week and a half ago.
He even recognized me, but couldn't pin-point where.
So I filled him in about being a regular at the Temple on Fridays last fall.
Once I said my last name, he remembered.
Sadly he's not working in the Temple this semester (unless they call him for Thursdays)
I found out his name is Donny Campbell and he is a business major.
It was a pretty awesome and random meeting that made me very happy.

I found the BEST recipe last week.
 Garlic-Lime Chicken.
It is to die for!
Here is the recipe.
It has a nice little spicy kick to it and tastes fantastic!
I highly recommend it.

 Haley and I have been going to the Temple again.
We're working on going every Tuesday and Thursday.

Also exciting for me:

97 days until I get married!
Down to double digits!!!!!!!

Good, Bad, Maybe

First things first though...pictures of my fort from 2 weekends ago:

Bad things this week:
  • Having to write a 7 page paper with lots of interruptions...
  • Wiping hair off the bathroom floor.....eww!
  • Down to my last pair of socks....I blame my laziness despite the laundry room being just downstairs.
  • Too much snow, well I take that back, it is more the ice that freezes over that is the problem. Then trying to walk home on an inch of ice, all downhill, in the dark with a super heavy bookbag. NOT FUN Y'ALL!! NOT FUN!! (Only fell once)
  • My room changing temperature all night long. SUPER cold, burning hot, window frozen shut.....awessssooomme.....
  • Eating the last of my cookies. =[ Now I am out of snacks to take to my 3 hour class.
  • Mr.Doomsday that teaches said 3 hour class. He can make any ray of sunshine into a demonic cancer causing agent.
  • Getting mostly cherry flavored fruit snacks when I open a pack. I don't even like those ones! Though they are starting to taste like Sweet 16 powdered doughnuts, not sure if that is good or bad.
  • Being away from Garett this weekend, bittersweet.
Good things this week:
  • Working out (twice)! My abs are thanking me for that one.
  • My room is clean! (thank you clean checks, despite having to wipe up all the hair on the bathroom floor).
  • DINNERS! Garett and I have had dinner 4 nights of the last 5! Enchiladas, Russian Chicken, Curry Chicken w/ rice & veggies, and Stew. YUM! We've been so spoiled!
  • That stew was made by the wonderful Garett, and getting out of my 3 hour class to enjoy said stew with him. =] Happy happy happy
  • Getting a mini date night on Monday! Garett was so happy, he skipped for a block or two!
  • Getting to see his face twice a day most days. =] =] =]
  • Going to bed at a reasonable hour, feeling SOOOOOOOOO GOOOOOD! *insert teen girl squad voices there*
  • And going home this weekend to see my family and Nikolai!!!! (I dreamed about him last night...O.o....he talked!.....weird...)
Off to do homework and 
count down the minutes until

Sweet Little Butterflies

Tonight during class we got a little break and naturally I checked my phone. I found a text saying:

Garett: I'm going to cook you steak and mashed potatoes. When you're done with class would you want to grab a vegetable to serve with it?

Not gonna lie, I nearly teared up just a little there. How sweet is he? Knowing I am in class for 5 hours straight from 5-10pm and starving by the end of it and he is going to make me dinner. Is he not the best? My heart fluttered a little with joy and admiration for this wonderful man. Oh he knows exactly what to do and say to make me beyond happy.

Now how shall I get him back??? I think Sunday we're going to have an epic dinner.....=D

When You Didn't Think You Could Sweat Anymore

First things first, some good ol' Bojangles.
Gotta. Wanna. Needa. Getta. Have A. Bojangles!


Or at least their fries with extra Bojangles seasoning.

Then one of the best places in all of NC:
The cutest gelato (Italian ice cream: 100000x better than American ice cream & extremely rich) shop you have ever seen.

The inside just screams happiness:
Well more like sings happiness. Not to mention the amazing Swedish woman who owns it. It's one of those shops where the owner knows all of her regular customers by name and whenever a family walks in, she seems to have known them for years. She is friends with everyone and everyone loves her. She doesn't have a website; her business comes all through word of mouth. I found it through a friend of mine and have passed it along to my friends. Next time you're in WS I hope you pay a visit, I promise you'll love it.

Sorry I got off on a tangent, my apologies my dear readers. But yes I went to Cafe Gelato with Kris and got pineapple and lemon. Perfect for a hot NC day.
Don't be fooled by how small it looks. It's more than you think and about as much as you can handle unless you're making a meal out of it.


And dearest Kris here looking gorgeous as ever.
Together her and I always have adventures. You can never be bored with Kris, that is for sure.

Next we found the Reynolda Gardens. I had heard of them many times before, but neither of us had been and we made a detour to discover what we were missing.
It was a beautiful site to behold despite the 100 degree weather with humidity to match.

And after a long day of exploring we decided to make dinner together (one of our favorite activities) On the menu? Salmon with a cinnamon glaze, along slices of green bell pepper, rice, red pepper humus and flat bread crisps.

And a cranberry/pomegranate juice to go along side.
Looks delicious doesn't it?
And it was!

Needless to say I had a great time with Kris as per usual.
What can I say? We bonded almost instantaneously and have been friends ever since.

It was an adventure of zigzagging down the river, picking up about a dozen spider passengers and then flinging them out of our canoe. Stopping to play in the river, getting waist deep in the water and then realizing you did not bring an extra set of clothes to change into later. And having your brother stand up in the canoe and paddle like you're on a gondola. Not to mention canoeing backwards (literally the canoe got flipped around a few times and so we would ride backwards until we got tired of it). But my favorite part by far was singing "The Call" by Regina Spektor A Capella with my brothers.

Also not pictured: Lunch at this cute little diner called Sweet and Savory. (Okay actually I do have a picture of it, but you can view it here later). But yes it was delicious and we were all impressed with it.

After having full bellies we made a quick stop to the cheese factory and store (which Albert was happy about). Where my dad got some nice sharp cheddar I believe and Albert got a cheese knife. See here. He is happy. =]

To end our travels we took a nice drive down the Blue Ridge Parkway. It was cloudy, but beautiful nonetheless.
I love our blue mountains, they make me feel right at home.


On a side note I have a terrible obsession and addiction...
Not to soda, but to collecting bottle caps! What can I say? When I see a glass soda bottle and see a cap I do not currently own as a pair of earrings, I suddenly must have them! I now have 26 pairs of bottle cap earrings. Told you I am addicted....=]

Sorry, but Bojangles fries are just too heavenly that I must talk about them again.
Oh Southern food, why must you taste so good?

Speaking of good food, WS is home of Krispy Kreme, therefore; what kind of person would I be if I did not take advantage of such savory goodness while I was in NC?
I hope you're drooling right now because I am. Don't worry, I downed 6 of them on the spot with no questions asked and Schmidty laughing at me for being a fatty. 3 hot off the belt, the sprinkly one, a raspberry jelly filled one, and that one with chocolate icing and red and white spinkles aka the Cheerwine doughnut. It was delicious in case you were wondering.

Cheerwine + Krispy Kreme doughnut = One of the most brilliant ideas known to man!

This is Schmidty by the way. Aka Jon, Jonathan, Schmidt, Dave, etc.
Yes he is more than a foot taller than me.
Yes I am short and I like being that way.
And that ends my adventures in NC.

A Feast For Five

Mother's Day we had a roommate dinner in honor of Nikki's Birthday. And this is how wonderful it looked!

Bread crumb covered chicken, corn on the cob,
With garlicy/buttery mashed potatoes,

And of course, bread with a cream cheese/butter mix with paprika and other spices on it.
(Funny story about the paprika. Nikki and I were at the store and she was looking for garlic salt and I saw the paprika and I almost did not buy it. I ended up buying it saying "you never know when you'll need it". Sunday came around and BAM! We needed it and I had it.) Great story huh?
It was a fabulous dinner! We are thinking we will have many more roommate dinners in the future. =]

More adventures of the big little kids...

Sorry it has been awhile since I last wrote, so I will try to cover everything if I can remember it all...it's been a bit of a blur.

So for some reason I left out going to Yellowstone the weekend of the 25th of September. That happened between Alisa's birthday party and throwing cereal.

But yes, Keely came home friday afternoon from class and said "So I was sitting in class and decided we're going to Yellowstone tomorrow!" And so we did. Rachel, Cacia, Keely and I hopped in Keely's car and drove two hours to Yellowstone!

Now don't get my wrong, Old Faithful is faithful but awfully stinky and boring. The real fun is playing in ice cold water, skipping rocks and throwing rocks when all else fails. In the end, a big splash and watching the sun set over the Tetons, overlooking a beautiful lake with your roommates is as good as it gets. =]

So I said "DO IT!!!!!!!!"

So two weekends ago (Oct 1st) Albert and I made the very long, cramped ride down to Provo to see MY SISTER and JESSE!!!!! =D And General Conference!

THE AWESOMEST BROTHER-IN-LAW EVER!!!!!


So the story behind this ice cream is amazing! My sister took me to this place called "Sub Zero Ice Cream" There you pick your base (yogurt, cream, etc) Then you pick flavors! The 1st amazing thing was they had MOUNTAIN DEW FLAVOR!!! Yeah go ahead and guess what kind I had! Wrong! Not just Mountain Dew, but strawberry too! (Oh geez that rhymed...) Then you get a mix in for free! (I got chicklets, b/c they are cool! But NOT in ice cream just fyi....) So they mix all of that up and THEN.....!!!!!! They freeze it with CO2!!!!! And it's all smokey or something and the smoke stuff rolls alllll over the counter and it is THE COOLEST thing next to photography!!!! And that is SAYING SOMETHING! (Can you tell how cool this place is?) It was AWESOME!
So yeah ice cream with my sister, best thing ever!

We quickly realized that Albert, Catherine and I ALL have our mother's crooked middle finger. Now if only we could have her awesome cooking skills, kindness and cuteness!

I love my sister! She's just so darn cute! (She has my mother's cuteness for sure!)

And for Halloween she's dressing up as a doll! (She is also the craftiest person I know! Seriously I am BEYOND jealous of her mad skills!)

And sadly I had to go back to Rexburg, where my dear sister does not live =[

But on the bright side, it rained twice this past week! (Mostly because I love the smell of rain!) And there were double rainbows TWICE in one week!
See? The second one is kind of faint but how pretty! God's promise to never flood the earth again. =]

Wednesday I went on a group date with our guy friends. Bill, Brent, Taylor, Mikey and Peter. I went with Taylor, Mikey went with Nicole, Brent went with my friend Megan and the other 2 picked some girls from their ward I think...

We went to a place called "The Craze" where we played a round of mini golf (We FAIL at mini golf) Then we played two rounds of Lazer Tag, pretended to play in the arcade (because we didn't feel like wasting money on dumb games just to get tootsiepops) And it was much fun! I fail at lazertag too because there were a bunch of 8 year old pros that kicked our butts. Sad day! So then we were gonna go play with whipped cream! But ended up going to the swing and stargazing while Brent played his guitar and we sang along quite poorly and joking around. And it was much fun, the end. =]

Friday Cacia and I did P90X which my roommates have been doing all week. It's a work out video set. We worked out from around 11pm until 1:30am. We worked on abs a little, arms and legs. Ah it felt SO good! I am still a little sore but it was a blast!

Saturday I got bored and found some glow-in-the-dark stars I had drilled holes in from girls camp last summer sooo....I strung them across the room so "every night is a starry one" (not that that is hard in Idaho....) If you can name the quote about starry nights you get 50 bonus points!
Then Rachel and I decided to change our room around!

Now our room is awesome! Not sure why, but we like it this way. And my alarm is across the room now.

Saturday night we got bored and decided to play sardines in the gardens. Now the gardens aren't THAT big but man, in the dark it is HARD! None of us could find Nicole so she just came out. Then Peter hid and 5 of us found him but, but he is not patient so he made us leave and he switched spots. Then he would text one of us where he was hiding next. We ended up laying in some bushes a few times....yeah fun right? And he left again and we all ended up laying in the middle of a field goofing off until we got so cold that we went home.
The guys asked us to feed them on Sunday (since they live in the dorms and the cafeteria isn't open on Sundays, and we're just that nice)

We planned this HUGE dinner for 6 (fairly large guys, Taylor, Brent and Bill are all like 6'2" to give you an idea of size). We spent an hour and a half, making homemade mashed potatoes, peeling, cutting up and mixing them. We made TONS of chicken (Thanks mom for buying me that HUGE bag, we used about half of it) and we warmed up some corn and made rolls, lemonade and punch! (See below, that was after we dug in ourselves)

And they showed up an hour and a half late...
Oh well, but we were quite proud. (I hope mom reads this and smiles because this is totally a mother sized dinner! And it took 6 of us to do this, mom you are AMAZING)

Sunday was pretty dull except Sunday night a few of us went stadium singing, then went to the gardens and chilled while Brent and Peter played songs on their guitars, and stargazed (It still blows my mind how many there are and how pretty they be!) It was alright, just cold.

Oh random news from yesterday! I took a walk with a friend and found out there are some trees behind some apartments a block over that are the same as some back home! (I hope you could keep up with that vague sentence) The line of trees in my back yard by where the blue car is parked. They have some here in Idaho! And i got soooooooooooooooooo excited because they remind me of home and they change colors and drop their leaves and it is wonderful =] =] =] =]

Also yesterday, I went to my Book of Mormon class as per usual and my teacher came up to me and said "Hey I trust you! Can you do me a favor? I need to go pick up my wife so could you start class? (He let me pick the hymn) Just sing this song, go through prayer and testimonies and I hope to be back for the discussion". It went pretty smoothly and come to find out, he had asked one other person to start the discussion in case he didn't get back in time (which he didn't) but he came shortly after. Between the two of us, everything went smoothly. =] It was pretty cool that he trusted me with that and it ended up being a wonderful class as always =]

Finally up to last night! Once again, quite bored so Keely, Nicole and I went and got cookie dough and ice cream! And baked it! (This time we made sure NOT to tell the guys...)

ALL GONE!
Then we watched "Sweet Home Alabama" and were going to go to bed BEFORE midnight....
But the guys showed up at 11 =/
But I still went to bed a few minutes after midnight! I AM SO PROUD OF MYSELF!!!!!
I was actually fully awake for German! It rocked!

But as for today, nothing big has happened. Went to class, did some homework and now I am catching you up on my life.

Oh and while typing this, Alisa made the toilet overflow and it leaked onto the floor below us. I am not sure what all happened but I heard some screaming, some more screaming. then some deep voice of a plumber or something and lots of racing to get towels. I think it is fixed since there is no more screaming. But to show how lazy I am, I never left my room to find out.

SO I think that is everything thus far, I hope I didn't miss anything.

(Okay ONE LAST STORY) Last night while I was waiting for the guys to leave, I decided to go check my phone, I hopped up and went to my room and I had a missed call from my dear sister and since she rarely calls me, I knew I must call her back immediately! I called her and that dear sister of mine started out "Soooo......Jesse is going away next weekend and I am going to be ALLLLLLLL ALOOOOOONE" She did not have to say another word. I replied "Would you like me to come visit you?" I heard a quick "Yessssssssss!" And so today I made arrangements to go down there next weekend =] (Cacia is going too, to see some friends of her's from back home)
And I am SOOOOOOOOOOOOOOOOOOOOOOOO EXCITEDD!!!!!!!!!!! I know I only saw my sister a few weeks ago but she is AMAZING and I JUST CAN'T WAIT TO SEE HER AGAIN!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

So yeah, um that's it, forreal this time! =]

College so far...

There is only one word I can think of to describe college so far, and that is:
SUPERFREAKINAMAZINGTASTICLYWONDERFULLYAWESOMENESS!!!

Yeah I just did that!

But seriously, I love college and everything about it.
The freedom
The AMAZING roommates
The cute boys
The spirit of everyone
The weather (mostly)
The parties
Dinner fun
Movie nights
The teachers
The adventures
EVERYTHING

So just to recap from my last blog...

Friday I went to class, and my Book of Mormon class is freakin sweet! The teacher is amazing and the Spirit was felt so strongly. We watched a video and I hope all that read this will watch it too! It was inspiring and I want to find the actual talk so I can keep it w/ me at all times.

I wish I could say the same for my math class. Both will be lots of work, however I rather study the scriptures all day than do the gazillions of assignments for math. My teacher is pretty dull but I think I miiight.....learn something.....we'll see. Worse comes to worse, it'll be an easy A.

But on to the fun parts of my weekend. So Friday evening came around and Rachel, Alisa, Cacia and I had no plans! HOW SAD!!! So Keely and Nicole were nice enough to invite us to a party they were going to. So we were SOOOO excited, we got dressed up 3 hours beforehand....

To finish the story....we walked up and down this street trying to find the party. So we saw some HUGE speakers in a window, so we guessed that was it and we were right. It was a blast and we ended up being there for a little over an hour. We met a guy name Simba, yeah pretty cool right?

So when we were walking home, 3 guys and a girl were walking the other way. And suddenly two of them laid down in the middle of the sidewalk....we still don't know what on earth they were doing...but afterward the other guy friend started laughing really hard.....so anyway we came back to the apartment and watched 17 Again with Aaron, Jameson, Trevor and Jake and maybe more guys....I can't remember...

So Saturday Alisa, Cacia, Rachel and I went shopping and got some groceries and a welcome mat that says "Got dirt?" and a cute little rainbow striped rub for our living room. It is quite cute! And brightens up our home. =] We did homework and then decided to go to Jamba Juice and we wanted to go stargazing....but in 30 minutes, the temperature dropped 20 degrees....so we went to the Temple and took pictures! These 3 are for you Aaron:

The second this picture was done, we booked it to Rachel's car and headed home and watched ELF with all our roommates and Brent, Mikey and Bill. And played the "HAHA" game. Well, watched some people play. It is where you put your head on someones' stomach until you make a circle. Then you go in a circle saying "HA" without laughing, the next person adding another HA until someone laughs....it always failed at Keely's turn.

So today we went to interviews with the bishopric so they that can give us callings next week. Then we came home and watch Errand of Angels. We went to church and come to find out, Simba is in our ward! How cool is that?? Yeah, so we came home and Bill and Brent came over to make us dinner.

They are both freshmen and have pretty much never cooked a day in their lives...but it's okay, Alisa and Nicole supervised. They made us chicken enchiladas! And they ended up tasting really good!!!
They were actually edible!

And Brent, Keely and Nicole showed us some of their clogging moves. (Oh yeah, so Keely and Nicole know these guys from their clogging team back home). So yeah that's it so far! Been awesome!
